03B-01-6High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed fries (122F – Hot Holding) located at fryer station. Fries are pre cooked for 2 and a half minutes, then held in fryer baskets until final cook at fryer station. As per Time as a Public Health Control Procedure form, fries are held no longer than 2hrs and time is being monitored on a chart. Observed no time marking, chart or time monitoring system in place regarding fries. **Repeat Violation**
