Flip top cooler in sandwich line ; shredded cheddar cheese (50F cold holding ) , Swiss cheese (52F – Cold Holding) pulled from walk in cooler less than 2hours ago. Operator placed cheddar cheese on ice to quick during inspection. Observed Swiss cheese container filled passing line mark. Operator removed excess cheese and moved to reach in cooler to quick chill. **Corrective Action Taken**
