Operator states butter was brought from cooler at 9am. Employee refilled ice surrounding butter. Second temp 62F, operator relocated back to cooler. Discussed using time as a public health control potatoes (55F – Cold Holding) operator state's potatoes were sitting on counter briefly. Operator moved to reach in freezer for rapid chill. Second temp 46F. Top of flip top cooler on cookline, right side: bleu cheese (54F – Cold Holding) second temp 39F; eggs (54F – Cold Holding) operator voluntarily discarded, unable to get second temperature ; ham (50F – Cold Holding) second temperature 37D; turkey (47F – Cold Holding)second temp 37F. Operator was able to provide temperature log that showed that the food was at proper temperature less than 4 hours ago.
