Observed raw ground beef (50F – Cold Holding); raw chicken (47F – Cold Holding); cooked corned beef hash (46F – Cold Holding); cooked turkey (51F – Cold Holding); cut tomatoes (48F – Cold Holding) in the reach in cooler in the center of the cook line. The operator stated the cold holding unit was below 40F approximately 3.5 hours prior to inspection. The operator removed the potentially hazardous foods to another cooler. Observed cooked orzo (47F – Cold Holding) stored stacked above the fill line in the top section of the reach in cooler at the salad station. The operator emptied half of the contents and store in the lower half of the reach in cooler. Observed sliced cheese (52F – Cold Holding) in the reach in cooler nearest the dish area.
