Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher sanitizer didn't register during first run. Manager Changed bucket, the machine was primed, and then the sanitizer strength registers at 100ppm. **Corrected On-Site**
03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Shredded Asiago cheese initial temperature 48F at 9:45 am. After corrections attempt, second temp was 42F at 11:10 am. Butter cups at front counter station initial temperature was 52F. 9:45am After correction attemp, second temp was still 52F. At 11:10 am. These were out less than 2 hours before final correction. Manager moved them to a nearby reaching cooler and will dispense from there going forward.
