22-49-4High Priority – Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the hi temp dish wash machine only reached 173° on the digital read out. After the initial run, it did not go over 148°. ALSO, the 160° surface test strip did not change color.
01B-02-5High Priority – Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed: cream cheese packs in the reach-in cooler, 53°. ALSO, the butter packs in the same reach-in cooler, 54°. Both items had been out for breakfast service and returned to the reach-in cooler.
