Observed packages of Brie in walk in cooler date marked to use by 10/27/24. Establishment stated they will not go more than 48 hours and continue to monitor date and time.

Intermediate – Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed establishment using reduced oxygen packaging for frozen fish and octopus done on site with out an approved plan. Establishment states they will no longer use reduced oxygen packaging of seafood items on site.
