03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the sandwich make table, rotisserie chicken (52F – Cold Holding); Philly steak meat (47F – Cold Holding). The items are portioned into trays and then stacked inside of another pan. The trays were removed to cool in the walk in cooler and cold hold.
