Observed bar dishwasher machine with chlorine sanitizer 0 ppm. No dishwasher utensils inside . Sanitizer bucket was not connected, 2 detergent buckets were installed. Executive chef requested the sanitizer immediately. Machine was calibrated. **Corrected On-Site**

Observed : milk (44 F – Cold Holding); half/ half (45F – Cold Holding) at coffee station inside reach in cooler for less than 4 hrs . Compressor was covered with papers and temperature went up.
