03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. – Observed Sliced Cheeses (Provolone, Cheddar, Pepper Jack) (48F – Cold Holding recheck 39F at 2:30 PM) in reach-in cooler on cook line. Employee moved cheese to freezer to rapidly chill. – Observed Blanched Fries (70F – Cold Holding recheck 55F at 2:30 PM) in prep area near oven. Fries had been out since 11 AM. Employee moved to freezer to rapidly chill. **Corrective Action Taken** **Repeat Violation**

Operator has professional cleaning scheduled for 12/18/24 and stated they will also clean before scheduled cleaning. – Soap dispenser has accumulation of grease and food debris off of cook line.
