03A-02-5High Priority – – From initial inspection : High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Salmon (50F – Cold Holding); Raw shrimp (48F – Cold Holding); Cooked chicken kabobs (52F – Cold Holding); Cooked chicken (50F – Cold Holding); Raw beef (50F – Cold Holding) in drawer cooler under grill. Drawer cooler has an ambient temperature of 50F. Employee stated all foods were replaced around 2pm. Employee will remove all TCS foods and place in walk in cooler. **Corrective Action Taken** **Warning** – From follow-up inspection 2024-07-10: Observed drawer cooler with beef at 50F in drawer cooler since 10am. See stop sale Observed drawer cooler with lamb at 50F in drawer cooler since 10am. See stop sale Chicken kabobs at 52F, chicken strips at 50F , beef at 51F and lamb at 51F brought out 2 hours prior. Employee was able to place items back in walk in cooler. **Admin Complaint**
