Observed chicken gravy at 124F, beef gravy at 124F- hot holding at 1:45. Per operator, steam table temperature turned to lower degree and items left out of temperature for approximately 30 minutes. Operator turned temperature up on steam table- chicken gravy 174F, Beef gravy 168F at 1:45. **Corrected On-Site**
