In kitchen steam table, cooked sausage (106F – Hot Holding); fresh arepas w/ corn (106F – Hot Holding). Per employee prepared and in line since 7:00am. Employee removed items to oven to reheat for proper hot holding. **Corrective Action Taken** **Warning** – From follow-up inspection 2024-09-19: Steam table Cooked sausage 108F (hot holding) Arepas 98F (hot holding). Per operator items were cooked and placed on steam table two hours ago. Observed steam table set at coldest temperature setting.
