Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Operator ran dishmachine 3 times, all tests were 0ppm chlorine. Operator states this morning he tested the machine and the ppm was 50-100ppm. Discontinue use of dishmachine for sanitizing and set up manual sanitization (3-compartment sink) until dishmachine is repaired and sanitizing properly. 3 compartment sink 200ppm quaternary **Corrective Action Taken** **Warning** – From follow-up inspection 2024-09-12: District manager on site states the dish machine was at proper PPM when tested this morning, they tested it this afternoon at it was not at proper PPM, they stop using dish machine put a call in to ecolab. Dishes are piled up in dish area, manager set up 3 compartment sink **Time Extended**
