Observed Cooked Shrimp (45F – Cold Holding); Cooked Noodles (48F – Cold Holding); Butter (47F – Cold Holding); Krab Rangoon Mix (47F – Cold Holding); Raw Chicken (47F – Cold Holding); Raw Beef (45F – Cold Holding); and Bean Sprouts (44F – Cold Holding); Shrimp Egg Rolls (45F – Cold Holding) in walk-in cooler at 3:40 PM. Operator stated the last known temperature of the food was at 39F-40F within 4 hours. Operator turned down walk-in cooler thermostat.
