Observed three employees in prep/dishwashing area, two servers, two cooks and one host working. There is only one Certified Food Protection Manager and he was not working today.

Tuna and Snapper on the cook line was thawing, unopened. All packets were stored on ice and still mainly frozen. Cook cut open packets.
