03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach in cooler on cook line, potato salad (45F – Cold Holding); pasta salad (48F – Cold Holding). Manager states they were put in cooler from walk-in cooler no more then 2 hours prior but they have been in and out of reach in cooler. Manager placed items in walk-in cooler to bring back down to temperature. **Corrective Action Taken**
41-10-4High Priority – Toxic substance/chemical improperly stored. In kitchen by triple sink, gallon of degreaser stored on bottom shelf with clean food containers. Manager moved degreaser off shelf. **Corrected On-Site**
41-27-4High Priority – Wiping cloth sanitizer solution exceeds the maximum concentration allowed. At front counter, Sanitizer Bucket (Quaternary 400+ppm). Employee discarded some and filled up with more water. (Rechecked 200ppm) **Corrected On-Site**
